Martini Cucumber 2007: A chamber vacuum machine is used to suck the air out of a porous piece of cucumber and then inject gin, vermouth, and a hint of simple syrup into the resulting voids. A martini pickle is instantly formed. It is garnished with dill, celery seed, and salt.
